Ingredients

Flour – 3 cups of all purpose flour. Be sure to scoop flour into your measuring cup and not pack it.

Spices – 2 teaspoons Ginger, 1 teaspoon cinnamon, 1 teaspoon baking soda, ¼ teaspoon nutmeg and salt.

Butter – 3/4 cup softened, salted butter. Make sure it is soft and not melted.

Brown Sugar – 3/4 cup packed brown sugar.

Molasses – 3/4 cup molasses. I like to use Grandma’s unsulphured molasses from Wal-Mart or Amazon.

Egg – 1 egg, best at room temperature.

Vanilla – 1 teaspoon vanilla. Any vanilla will do.

How To Make The Best Soft Gingerbread Cookies

Step 1: Gather Ingredients – To ensure a smooth baking experience, gather your ingredients before starting. Be sure to pull out your eggs and butter early as they need to be at room temperature before mixing.

Step 2: –Start with 3 cups of flour. Then add Ginger, cinnamon, baking soda, nutmeg and salt. Mix and set aside.

Step 3: – In a stand mixer cream butter and brown sugar until nice and fluffy.

Step 4: – Once the butter mixture is fluffy, add molasses, 1 egg and vanilla. Mix well.

Step 5: – Gradually add flour mixture a third at a time. Mix on low until well incorporated.

Step 6: – Once dough is mixed transfer to plastic wrap, press into a disk, wrap completely and refrigerate overnight.

Step 7: – Remove from fridge and cut into squares. Roll each square between your hands and form it into a ball. Once a ball is formed, roll in granulated sugar.

Step 8: – Place gingerbread balls on a baking sheet and bake at 350 degrees for 8 to 10 minutes.

Step 9: Cool and Enjoy – Let cool on the baking sheet for two minutes and then transfer to a wire rack to cool completely. Once cookies are cooled enjoy these soft, full of spice cookies on their own or with a glass of cold milk!

Instructions
 

  • Mix flour, ground ginger, ground cinnamon, baking soda, ground nutmeg and salt together with a whisk then set aside.
  • In a stand mixer cream together butter and brown sugar until light and fluffy.
  • Add molasses, egg and vanilla. Mix well.
  • Add dry ingredients to wet ingredients and mix until just incorporated.
  • Transfer dough from mixing bowl to plastic wrap. Form dough into a disk and cover completely. Refrigerate for 4 hours or overnight.
  • Cut dough into squares. Roll each square into a ball. Coat each ball in granulated sugar. Place dough balls on baking sheet.
  • Bake at 350℉ for 8 to 10 minutes. Cool on baking sheet for 2 minutes then transfer to wire rack until completely cooled.
