Ingredients for Hawaiian Haystacks. Cooked chicken, Rice, 2 cans of cream of chicken soup, pineapple, crasins, milk. coconut, chow mein noodles, and cheese.
  • 4 cups cooked rice (white or brown)
  • 2 cups cooked chicken, shredded or diced
  • 2 cans (10.5 oz) cream of chicken soup
  • 2 cups milk, cream or half and half

Optional Ingredients

  • 1 cup diced pineapple (fresh or canned)
  • 1 cup shredded cheddar cheese
  • 1 cup chopped tomatoes
  • 1 cup chopped bell peppers (red, green, or both)
  • 1 cup sliced green onions
  • 1 cup La Choy Chow Mein noodles
  • 1 cup dried cranberries
  • 1 cup shredded coconut
  • 1 cup sliced almonds
  • Salt and pepper to taste

How to Make Hawaiian Haystacks

Step 1: Cook the Rice – Prepare the rice according to package instructions and set aside.

Step 2: Make the Chicken Mixture – In a medium sized sauce pan, combine the cream of chicken soup and milk, cream or half and half over medium heat. Stir until well combined and heated through. Add the cooked chicken to the sauce pan and stir until the chicken is coated in the sauce. Allow it to simmer for a few minutes until heated through.

Step 3: Prepare the Toppings – Arrange the diced pineapple, chopped tomatoes, bell peppers, green onions, shredded cheese, shredded coconut, and sliced almonds in separate bowls for easy serving.
