  • 1/2 cup butter
  • 2 heaping tablespoons minced garlic
  • 1/2 cup flour
  • 3 cups half and half
  • 2 1/2 tablespoons chicken base – Better Than Bouillon
  • 2 cans (28 ounces each) diced or crushed tomatoes – we buy diced and then blend it.
  • 1/3 cup sugar
  • 2 1/2 tablespoons dried basil or 1/2 cup fresh basil leaves
  • 1/2 teaspoon ground pepper
  • 1/2 teaspoon salt

How to Make Easy Creamy Tomato Basil Soup

Step 1 Gather Your Ingredients – This soup comes together quickly and you will need to continue to stir as you mix in ingredients, so be sure to get everything ready before starting.

Step 2: Sauté – Start by melting 1/2 cup of butter in a large pot over medium heat. While the butter is melting, I like to open the two 28 ounce cans of diced tomatoes and empty them into a blender. Blend until smooth, then set aside. Add 2 heaping tablespoons of garlic to the butter and sauté for 1 minute until the aroma fills your kitchen.

Step 2: Create Roux – Stir in 1/2 cup of flour to make the roux. Allow roux to cook for 1 to 2 minutes.

Step 3: Add Half and Half- Slowly pour in 3 cups of half and half, adding about 1 cup at a time. Allow mixture to heat and thicken between each cup added.

Step 4: Stir in Chicken Base and Tomatoes – Once all the half and half has been added, stir in 2 1/2 tablespoons of chicken base and the 2 – 28oz cans of pureed tomatoes.

Step 5: Add Spices – Finish off by adding 2 1/2 tablespoons of dried basil, 1/2 teaspoon of ground pepper, 1/2 teaspoon of salt and 1/3 cup sugar. Stir and heat until heated through.

Step 6: Dish and Enjoy – Ladle the creamy tomato basil soup into bowls and garnish with fresh basil leaves or a sprinkle of grated Parmesan cheese. Serve alongside your favorite grilled cheese sandwich!

  • In a large sauce pan melt butter, then add garlic and sauté for 1 minute.
  • Whisk in flour to make roux. Allow to cook for 1 minute.
  • Slowly add in half and half a cup at a time. Whisk in milk and allow mixture to heat and thicken each time before adding more half and half. Stirring consistently.
  • Stir in chicken base and pureed tomatoes. Add sugar, basil, ground pepper and salt.
  • Continue to stir until heated through and serve with your favorite grilled cheese sandwich.
