There’s nothing quite like a warm bowl of chicken noodle soup to soothe the soul and lift your spirits. Whether you’re feeling under the weather or simply craving a comforting meal, this easy chicken noodle soup recipe is a go-to solution. Ingredients

  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 2-3 dried bay leaves
  • 1 teaspoon whole dried thyme
  • 1 onion, chopped
  • 1 tablespoons garlic, minced
  • 8 cups water
  • 8 teaspoons of chicken bullion
  • 2 cups cooked chicken (cubed or shredded)
  • 16 oz pasta noodles
  • Salt and pepper to taste

How to Make Easy Chicken Noodle Soup

Step 1: Sauté the Vegetables – In a medium sized pot add a tablespoon of olive oil. Chop carrots and celery then add to pan. Add 2 – 3 dried bay leaves and 1 or 2 tablespoons of whole dried thyme. Sauté vegetables for about 5 minutes. Add onions and sauté until translucent and carrots and celery are soft and tender.

Step 2: Add Broth and Chicken- Don’t forget the garlic! Add 1 tablespoon of minced garlic and let sauté for another minute. Pour 8 cups of water and 8 teaspoons of chicken bullion into the pot. We like to keep the giant container of Knorr Chicken Flavor Bouillon from Sam’s Club on hand for this recipe and others. Add 2 cups of cooked chicken. I like to buy our chicken breasts in bulk and then cut and cook them in big batches and freeze. I divide the chicken into quart size freezer bags and measure out 2 cups for each bag. This makes it easy to pull out of the freezer and add to just about any meal. You can also use rotisserie chicken if you prefer.

Step 3: Cook the Noodles – While the soup is simmering, cook your favorite pasta noodles according to the package instructions in a separate pot. Drain and set aside. We do not add the pasta to the soup. Keep them separate to prevent any leftover pasta going soggy.

Step 4: Dish Up and Enjoy – Dish up pasta and top with broth and chicken and dinner is served. Pair with a soft homemade roll and enjoy!
