Easy BBQ Chicken Sandwiches – In The Slow Cooker
There’s something simply satisfying about slow-cooked dishes. The anticipation of hours spent marinating and simmering transforms simple ingredients into a masterpiece. Ingredients
Chicken – in this recipe you can use either fresh or frozen chicken. If you are a busy working mom like me, you probably forgot to pull the frozen chicken out last night. I usually end up using frozen chicken for this reason and have not had any issues.
Spices and seasonings – Salt, pepper, paprika, ranch dressing seasoning, mince garlic,
Liquids – vinegar, BBQ sauce and water.
Cheese – We love a good non-smoked provolone, but you can use any cheese you prefer.
Steak Rolls – We have younger kids so we like to get the large bag of small stake rolls from Wal-Mart. I like the smaller size so my little kids can have 1 and my big kids can have 2.
How to make slow cooker BBQ Chicken Sandwiches
Step 1: Prepare your slow cooker – You will want to start by either spraying your slow cooker with a cooking spray or lining it with a Crockpot liner. If you use a crockpot liner it will save you immensely in your clean up time. Win win.
Step 2: Add Ingredients – Add two pounds of chicken to you slow cooker. The chicken can be either fresh or frozen. You will need to adjust the cook time accordingly. Then add a teaspoon of salt, pepper, and smoked paprika. A tablespoon of powdered ranch dressing seasoning, and minced garlic. Add a tablespoon of vinegar and one-half cup of water. Finish by, topping chicken with Sweet Baby Rays Barbeques Sauce.
Step 6: Cook – Cover and let cook. Fresh chicken will need to cook on high for 4 hours and low for 6 hours. Frozen chicken well need to cook on high for 4-6 hours and low for 6-8 hours. Chicken is ready when it has an internal temp of 165 degrees and will shred with a fork. And now we wait!
Step 7: Shred – Once the chicken is fully cooked and shreds easily with a fork it is time to shred it. Shred chicken either with two forks a hand mixer or in a stand mixer. I prefer to use the stand mixer as it is very fast and thorough. Once all the big chunks are broken up, return shredded chicken to the slow cooker and stir. Top chicken with additional BBQ sauces if desired and stir.
Step 8: Butter and Toast – Next slice, then butter and toast steak rolls on a griddle until nice and golden brown. Once rolls are toasted slather some miracle whip or mayo if desired and then top with a slice of provolone cheese, chicken and extra BBQ sauce.

- 1 Griddle or pan

- ½ cup water
- BBQ sauce
- 1 pkg sliced provolone

- miracle whip or mayo optional
Instructions
- Place a slow cooker liner in the slow cooker or spray the slow cooker with cooking spray.
- Add chicken to slow cooker. Chicken can either be fresh or frozen.
- Add all the seasonings, garlic, vinegar and water.
- Cover all the chicken with BBQ sauce. We love Sweet Baby Rays Barbeques Sauce.
- Cover and let cook. Fresh chicken will need to cook on high for 4 hours and low for 6 hours. Frozen chicken well need to cook on high for 4-6 hours and low for 6-8 hours. Chicken is ready when it has an internal temp of 165 degrees and will shred with a fork.
- Shred chicken with either two forks, a bowl and a hand mixer or in a stand mixer. return chicken to the slow cooker and stir and top with more BBQ sauce if desired.
- Slice and butter steak rolls and toast them on a griddle or in a pan until they are nice and golden brown.
- Slather rolls with some miracle whip or mayo if desired. Then top with a slice of provolone, shredded chicken, and more BBQ sauce if like it saucy.
