How to Make Decadent Semi-Homemade Mint Brownies

Step 1: Prepare the Brownie Batter – Preheat your oven to 325 degrees Fahrenheit (160°C). In a mixing bowl, combine the box brownie mix, melted butter, eggs, and heavy cream. Stir until well combined and smooth. Fold in chocolate chips.

Step 2: Bake the Brownies – Pour the brownie batter into a greased 8×8-inch baking pan, spreading it evenly. Place the pan in the preheated oven and bake for 35-40 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Be careful not to overbake. Remove from oven and cool completely before frosting.

Step 3: Make the Mint Frosting – While the brownies are cooling, prepare the mint frosting. In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, alternating with the heavy cream, until the frosting is smooth and creamy. Stir in the peppermint extract and green food coloring, until well incorporated. Gently fold in the chopped Andes mint candies, reserving some for topping.

Step 4: Frost the Brownies – Once the brownies have cooled completely, spread the mint frosting evenly over the top. Sprinkle the reserved chopped Andes mint candies on top of the frosting for an extra burst of minty goodness.

Step 5: Serve and Enjoy – Cut the mint brownies into squares and serve them to your eager taste testers. Store any leftover brownies in an airtight container at room temperature for up to 3 days, or in the refrigerator for longer freshness.
