Ingredients

For the Biscuits:

  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 3 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon cream of tartar
  • 1/2 cup butter, frozen
  • 3/4 cup milk, 2% or whole

For the Gravy:

  • 1 pound breakfast pork sausage (I recommend Jimmy Dean’s maple)
  • 1/2 cup all-purpose flour
  • 4 cups milk, 2% or whole
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • additional salt and pepper to taste

How To Make 30-Minute Biscuits and Gravy

Step 1: Prepare the Biscuits

Preheat your oven to 475°F (240°C). In a large mixing bowl, use a cheese grater to grate the frozen butter. If you do not have frozen butter you can use butter straight from the fridge. You will want the butter as cold as can be so that it will grate instead of melting.

In a separate bowl whisk together the flour, baking powder, sugar, salt and cream of tartar. Add the dry ingredients to the butter. Use your fingers or a pastry cutter to combine until the mixture resembles coarse crumbs.

Pour in the milk and stir until just combined. Be careful not to overmix.

Use two spoons to scoop out biscuit dough and place them on a baking sheet. You can make the biscuits as large or as small as you would like.

Bake for 8-10 minutes or until golden brown.

Step 2: Prepare the Gravy

In a large skillet over medium to medium high heat, cook the breakfast sausage, breaking it apart with a spatula or as I prefer a meat masher, as it cooks.

Once the sausage is browned, sprinkle the 1/2 cup of flour over it and stir to combine. Cook for an additional 1-2 minutes.

Gradually whisk in the milk a cup at time, ensuring there are no lumps. Continue to cook and stir about 5 minutes until the gravy starts to simmer and thicken.

Season with salt and pepper. Allow gravy to continue to simmer for 1-3 minutes. Add additional salt and pepper to taste.

Step 3: Serve and Enjoy! Plate the warm biscuits and generously ladle the savory sausage gravy over the top.
